La Mer (Maldon Sea Salt) - The best way to savour my Molten Brownies (customers agree!) The crunch of the sea salt complements the rich bittersweet flavor profile of the brownie, and also allows the textural contrast to shine. It's a crowd favorite!
Cacao (Callebaut Chocolate) - This is a chocolate lovers' dream! I developed the toppings (tempered chocolate and piped dark chocolate) such that it melts when heated up, transforming into a ganache cream that lends an insanely crazy burst of chocolatey-ness without being overly sweet. It's "crazy good" and "feels like a warm hug" as described by one of my customers!
